    Refreshing meal on a hot day. I doubled the veggies so we could have leftovers, used half of the veggies to serve three people (it did take a bit of time to julienne three cups of veggies :/). Served these with some chopped roasted peanuts on top along with mint and cilantro, and some soba noodles on the side (wish they'd been cold, too).
