    I think I just found my new favorite carrot cake recipe. The flavors melded beautifully, the cake was moist and it was delicious. I did add a half cup of raisins and baked the batter as cupcakes. It yielded 18 cupcakes and I baked the full pan 25 minutes and the final 6 were done at 23 minutes.
