Coronation chicken from The Picnic: Recipes and Inspiration from Basket to Blanket (page 99) by Marnie Hanel and Andrea Slonecker and Jen Stevenson

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

We ate this as a sandwich topping for baguettes - on a picnic, no less. I really like using half mayo and half yogurt, which gives the chicken salad a fresher taste. Unfortunately, we left out the mango since no good ones were available, but I can imagine the sweet, silky mango fruit would really round out the flavors and textures. For an easy after-work picnic, I made the chicken salad the night before using a rotisserie chicken from Costco, and packed the cashews and coconut separately to keep them crisp before putting the sandwiches together at the picnic site.
