    As with most TK recipes, the results are amazing if you follow the directions exactly. Importantly, weigh out the correct amount of puréed potatoes to get the right consistency. Passing the hot potatoes through a tamis is a hassle (use the finest screen) but delivers serious results! It is also important to maintain the correct temp on a non stick pan or griddle (175C / 375 F). 10/10.

    Made these twice in quick succession. Tasty and fluffy without the use of bicarb. Great.
