    With a commercial bottle of ranch dressing on hand (a very rare find in our fridge) the idea of ramping it up with homemade salsa, hot sauce & fresh herbs worked well. Cilantro is a hard no so I used a big spoonful of a loose leaf, frozen "ranch mix" (parsley, chives & dill). I roasted my chicken breast in a "Tex-Mex" spice blend and our salad bowls also included romaine, red onion, sweet peppers, celery, corn, hard boiled eggs, pickled matchstick carrots & radishes, crispy tortilla strips and cubed monterey jack. This was a tasty & filling dinner salad.
