    A taco craving brought me here (scaled to 1.5 lbs of beef & 1/2 the spice mixture). I like the use of the enchilada sauce in the filling; a very smooth "smoky roasted salsa" from Not Your Mama's Canning Book was a perfect choice. With lots of toppings (a pickled corn relish, shredded iceberg, lime crema, pickled onions & grated cheddar), this was a great dinner AND I now have enough of the meat mixture for a lunch taco + 2 portions for future cravings stashed in the freezer.

    For an easy weeknight/freezer meal, this was fantastic. I used trader joes enchilada sauce and added canned green chilis.
