    Made ahead prior to hosting many family members. Everyone loved this! Would make again. A great freezer meal to have on hand.

    Very good recipe. What is special is the use of both roja and verde enchilada sauce. Having been a unofficial student of Rick Bayless, I have learned how to make both! But the roja works well for smoky-ness and the verde gives the dish a brightness. And all the stuff rice beans and corn in the middle make it hearty and the cheese makes makes it comfort food!
