Gingered applesauce cake glazed with caramel from My Kitchen Year: 136 Recipes That Saved My Life (page 93) by Ruth Reichl

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Delicious spicy cake. Good way to use applesauce.

The cake was easy to make, using only two bowls and a whisk, which made for easy cleanup. Check for doneness 5 minutes early as it didn't take the recommended 45 minutes to bake. The cake was very moist and the crumb was tender. The ginger, cloves and cinnamon overpowered any apple flavor provided from the applesauce, but it was a very delicious spice cake. The caramel glaze complimented the warmth of the spices. Definitely worth making.
