Eggplant and arugula sandwiches from My Kitchen Year: 136 Recipes That Saved My Life (page 174) by Ruth Reichl

  • arugula
  • balsamic vinegar
  • Japanese eggplants
  • ficelle bread

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute baby eggplants for Japanese eggplants, and baguette bread for ficelle bread.

We enjoyed these sandwiches; they seem like a good base to play around with. We subbed goat's cheese for the butter on the bread and drizzled extra balsamic and olive oil over the arugula. Maybe some roasted tomatoes next time?
