Can substitute pork butt or pork shoulder for ground pork, the book's "Herbal seasoning paste (Recado de bistec)" or dried epazote for epazote, chiles for peppers, vegetable oil for lard, currants for raisins, oranges for sour orange juice, and Edam cheese for Gouda cheese. Can substitute cheesecloth for banana leaves to wrap the cheese.
