Pargiyot with onion marinade from Zahav: A World of Israeli Cooking (page 244) by Michael Solomonov and Steven Cook

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Staple weeknight recipe. Cooked over the open fire?! Nothing better! Pair with pita, olives, toum, and pickled beats for the best (?!) dinner of your life

Simple and great marinade for chicken. I definitely plan to make it again.

We loved this marinade for chicken, which apparently is the house marinade at Zahav. It makes the meat very tender. The parsley also makes the chicken greenish, which I thought was a fun addition to the dinner plate!
