    I used panang curry paste because it's what I had. I also used just one can of coconut milk because I like a thicker curry. I served with reheated leftover white rice to get it out of the fridge. This curry was fine, I like all the vegetables. It isn't anything I'd need the recipe to make again, just a very straightforward curry. Nice, warming, and filling for a chilly night. I probably won't reach for this one again.
