Can substitute bulgur or couscous for freekeh, and baba ganoush for eggplant.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

There's quite a few issues with this recipe. With a 12 min cooking time for the freekeh, I'm guessing that cracked freekeh is called for - the recipe doesn't state this & the accompanying photo appeared to use wholegrains. I did use the cracked variety, but the volume of fluid was way off & it would've resulted in sludge. Strongly recommend following different cooking instructions for your freekeh & then proceeding with the rest of this recipe as it was quite tasty.
