Gluten-free orange and almond cake from A Free Range Life: Share the Love (page 150) by Annabel Langbein

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

This is a lovely flavourful moist cake. I made it for a friend's birthday and everybody loved it, whether they were GF or not. I just made a glaze of orange juice and icing sugar. I'll try the citrus topping next time. The ground almonds I used were not blanched, so it didn't look quite as refined as the photo. I'll find blanched for next time. And I used regular grind cornmeal instead of polenta - think they are the same things - it's a matter of coarseness and semantics. Very easy to make! I did have to bake it for 55 minutes at 325F.
