    I made 1/2 recipe in a 7" pan; baking time was the same and it's not a tall cake. Loved the spices! The texture was a bit coarse and dry, but my self-rising flour might not have been fresh enough and/or I overbaked it. We enjoyed the cake with the whipped cream topping (with added vanilla).

    I made this for my husband to take to work so I didn't get to taste it myself but it received rave reviews. I have been asked to make this again soon. I skipped the cream and just dusted with icing sugar for ease of portability. Looking forward to trying this one myself. Edited to add that I have now made this a second time. If you are a fan of chai, you really should try this cake. The flavour is just perfect. The cake is light, moist and would work as both a dessert or for a mid morning coffee accompaniment.

    Recipe calls for self-rising flour and baking powder. I used regular flour. It also called for a 10" pan, and I used a 9". The cake was fabulous, and very flavorful.

    The perfect balance of chai flavors. The flavor of tea shines through. Not overly sweet. I steeped the cream overnight with some of the chai spices before whipping. It was the perfect complement.
