    Used bacon instead of prosciutto. Great flavour! My husbands family is incredibly picky and they loved it.

    Lovely sage flavor in the soup. I skipped the cream because the opened container I was planning to use was a little too over the expiration date. We didn't miss it! Added several big pinches of salt at the end. I also subbed bacon for the prosciutto and added some sauted mushrooms. Very good, agree with other commenter that this is far from baby food and a good sweetness level. Will make again.

    This is just a really good butternut squash soup recipe, starting with the fact that, as the authors point out, it’s not too sweet. It also has a lot going on flavor wise and therefore doesn’t just taste like baby food, to put it bluntly. Sage, onion, garlic, and the prosciutto crisps— this is like the soup version of Alana Chernila’s butternut squash & sage & bacon pasta, which my family loves. Definitely making this again!
