    Thanks to the before mentioned tips, I added the onions and crushed garlic cloves half way through cooking. That worked out well. The potatoes were great and were the highlight of the meal. All 5 of us like them and went back for more. I used a family size package of red skin potatoes from the Little Potatoe Company, sliced in half and they just fit my sheet pan. I placed sliced side down for the first roasting and they crisped up nicely even though they were packed onto the pan. I will definetely be adding these into rotation.

    The potatoes (red) turned out wonderfully crisp on the outside and fluffy inside. The rosemary got crisp too, but was still flavorful. Unfortunately, the garlic (which I peeled but left whole; recipe didn't specify) and most of the onion burned, even though the potatoes were done in the shortest specified cooking time. So next time I'll omit those, or cut the onion larger as averythingcooks suggests, but this was a great method for roasted potatoes.

    I scaled this down using 2 russet potatoes and my "medium" cast iron skillet. They are simple (just potatoes, onions, garlic, rosemary and oil) BUT they are really good and beautifully crispy as promised. Next time I would cut the onion in larger wedges and use one pan size up to get a "better" single layer. A definite repeat.
