    Marinate chicken overnight. Can substitute ginger root for ginger paste, tomatoes for canned tomatoes, and jalapeño chiles for finger chiles.

    I really enjoyed this. It uses mainly store-cupboard ingredients and is fairly simple to prepare in comparison to other more elaborate tikka masalas. I like that the author provides a few different options to make it lighter or more indulgent - I always omit the butter and use yogurt rather than cream, and it's still delicious. As with other chicken recipes I've successfully made a veggie version by roasting cauliflower in the suggested marinade and serving the crispy florets on top of the sauce. Yum!
