    These are classic, crispy potatoes rst'd with chopped onions, smashed garlic cloves & fresh thyme. Standing in for "old white potatoes" were 2 aging russets & I seasoned with a rosemary infused salt. Next time I will cut larger cubes (or wedges?) & either chop my onions larger OR add them later in the roast. A very nice part of a lovely steak dinner.
