Magic mineral broth from Clean Soups: Simple, Nourishing Recipes for Health and Vitality (page 35) by Rebecca Katz and Mat Edelson

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute juniper berries for allspice berries, and regular sweet potatoes for Japanese sweet potatoes.

The thing I learned from making this broth is that Kombu is a flavour bomb. It now has prime shelf space in my pantry.

A very nice refreshing broth to sip on. I followed the recipe to the letter except for adding stray red beets I found in my bin. So the potassium, folate, manganese, magnesium, phosphorus, iron, Vitamin C and vitamin B6 levels were elevated in my version of magic mineral broth. This will be added to the portfolio of broths in my freezer now!
