      The thing I learned from making this broth is that Kombu is a flavour bomb. It now has prime shelf space in my pantry.

      A very nice refreshing broth to sip on. I followed the recipe to the letter except for adding stray red beets I found in my bin. So the potassium, folate, manganese, magnesium, phosphorus, iron, Vitamin C and vitamin B6 levels were elevated in my version of magic mineral broth. This will be added to the portfolio of broths in my freezer now!

      Family couldn't get enough of this soup -- big hit! I opted to use chicken broth when making the Thai Coconut Broth, rather than the Magic Mineral Broth, and it was still delicious. I'm sure it would be even better with MMB. NOTE: Where the online version calls for "freshly ground ginger," the book calls for freshly grated ginger.
