    This is such an easy and outstanding recipe. I expanded the recipe to cure a side of salmon, and left the cure on for three days, turning daily. I rinsed it and let it rest for a few hours before slicing. The texture and flavor were perfect. It has great wow factor so I’ll definitely be making this again.
