    I used this simple recipe as a base for a large pot of Flexible Chili Verde. Cooked up the soup base as described ( but in larger qty & with veg broth) then added minced kale and corn along with the beans. Finished with oat milk cream. At this point, divided the base and added rotisserie chicken to one half for the meat eaters in the fam.

    Very easy and a good use of leftover chicken meat (I used Costco rotisserie chicken). It was too tart for my husband and me, but next time we'll add some cheese to help tone down the acid.

    A very flavorful use for leftover grilled chicken breasts. I used Rancho Gordo moro beans, this was a delicious chili variation that I'm happy to return to for an easy and warming meal.
