    Made this today with tinned chickpeas so no soaking or cooking required. Used a regular (English) cucumber. Super easy and very tasty. Would make a great packed lunch - no leaves to get soggy. Baby ate a big bowl of this, even the red onion, which really surprised me. The chickpeas kept her busy for a while which was a bonus! Vegan. Allergy-friendly. Will make again!
