Smoky eggplant caviar from Samarkand: Recipes & Stories from Central Asia & The Caucasus (page 39) by Caroline Eden and Eleanor Ford

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Appetizer selected as part of Samarkand cookbook dinner. Everyone just loved this. Just the right smoky flavor. Pomegranate seeds add crunch and color. The person who made this chose to use mint (cilantro and basil are other options) which worked extremely well. Easy to make and worth repeating.
