Where’s the full recipe - why can I only see the ingredients?

Accompaniments: Green suzma; White suzma

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    Can substitute mint for sorrel.

A very tasty, filling soup. The green paste and goat's cheese lifted an otherwise rather ordinary dish to quite another level for us, so don't skimp on those.

Very good. More stew than soup. As per the suggestion in the book, subbed green paste for a handful of cilantro in the last few minutes of cooking.
