    I will say we cheated on this one a bit and used lamb, and it was delicious. 1 rib chop and one shank went into the pot and this was a good amount of protein. We also increased the barley a bit and got closer to a stew. Because of the shank I increased the cook time to 40 minutes under pressure. We also added a parsnip to the diced vegetables and left the garlic in. Lovely and homey.
