Tourtière, my way from Dinner Pies: From Shepherd's Pie and Cottage Pie, to Tarts, Turnovers, Quiches, Hand Pies, and More, with 100 Delectable and Foolproof Recipes (page 230) by Ken Haedrich

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

In the interest of trying out recipes from the myriad of cookbooks I own, and having had good success with Ken Haedrich recipes in the past, I made his version of tourtiere. I will say it was good, and the recipe works; I am not sure it is better than my current standby recipe by Chuck Hughes. I used all ground pork and I did like the addition of mushrooms, garlic, carrots (the potatoes are classic) but I think the ketchup is unnecessary in the filling and not sure the worcestershire adds much. The filling tasted a bit muddled to me, and a bit like meatloaf. which I like, but that is not tourtiere to me.
