Notes about Recipes in this book

  • Chicken, broccoli and cheddar turnovers

    • MollyB on June 01, 2021

These were pretty good but not great. I really liked the crust, but the filling was a bit bland for us. I used medium (not sharp) cheddar since that was what I had, and a sharper cheese might make it livelier. Some red pepper flakes would also be a good addition. Be careful not to overcook the broccoli when you cook it on the stovetop.

  • Natchitoches meat pies

    • MollyB on January 14, 2020

These were great little pies if you're looking for a hand pie with a ground meat filling. This was my first time making fried pies, and they turned out beautifully. They were very nice reheated in a toaster oven for lunch the next day.

  • Fried green tomato and pimento cheese galettes

    • bching on October 22, 2022

This was a tasty meal but also a project. The recipe is not very well-written so read it over a couple of times before prepping. You will think of ways to avoid dirtying so many bowls. The green tomatoes are too thinly-sliced to hold up to all the handling they get by being fried and arranged in the crust. If I make this again, I would slice them 1/2 inch thick instead of a scant 1/4 inch.

  • Colcannon pie

    • mjes on September 03, 2021

This is a solid, traditional recipe for which I used kale rather than cabbage. It is easy to see why the recipe became a classic - easy to make, inexpensive ingredients, filling, tasty ...

  • Broccoli, mushroom and ham quiche

    • hillsboroks on December 30, 2019

This was the perfect quiche to use up dibs and dabs of holiday leftovers and end up with something delicious for dinner. It is not heavily spiced so all the veggie flavors come through. I only had half as much broccoli as was called for but also had a small piece of cauliflower which fitted in great.

  • Tex-Mex chicken tortilla pie

    • MollyB on April 08, 2022

We liked this a lot! It was a great way to use up some cooked chicken, ricotta, and slightly stale tortillas. Everyone had seconds!

  • Tourtière, my way

    • nadiam1000 on January 09, 2017

In the interest of trying out recipes from the myriad of cookbooks I own, and having had good success with Ken Haedrich recipes in the past, I made his version of tourtiere. I will say it was good, and the recipe works; I am not sure it is better than my current standby recipe by Chuck Hughes. I used all ground pork and I did like the addition of mushrooms, garlic, carrots (the potatoes are classic) but I think the ketchup is unnecessary in the filling and not sure the worcestershire adds much. The filling tasted a bit muddled to me, and a bit like meatloaf. which I like, but that is not tourtiere to me.

  • Shepherd's pie

    • MollyB on January 18, 2022

Very tasty version of shepherds pie, made with ground beef. I'm trying to eat down my freezer this month, and this was a great way to use up a number of freezer and pantry ingredients. I did end up with extra filling, and followed his advice to just so additional pies without a bottom crust, with just the potato topping. The one place I strayed from the recipe was in the potato topping - I used some leftover celeriac/potato puree rather than the mashed potatoes specified in the recipe, and it worked perfectly.

  • Baked Hot Brown-ish sandwich

    • ebs on February 02, 2017

My family loved this - the crust was nice and flaky, the flavors were great (though I left out the mustard) and it was a good way to use up leftover roast turkey
