    Delicious! I think even better than chickpea hummus because of all the layers of flavor. I did substitute shredded zucchini I had in the freezer instead of yellow squash, and added some leftover lentils and jalapeño to the squash and onions mix. Other than that, I followed the recipe as written... which involved other recipes: Squash and Onions, Garlic Confit, and Okra Oven Fries (Sadly, I only had 1 okra.) I've never had a bad outcome from any recipes in this book.
