    Can substitute water for vegetable stock, and brown lentils for green lentils.

    Really delicious. Needs a bit more salt. Pretty easy to prep and throw in the instant pot in the morning to have a hearty lunch.

    Simple and good. I added poultry seasoning and just red lentils because that's all I had on hand. I did add corn. Next time I'll add mushrooms also.
