    Exactly what I was craving last night - hearty and warming, healthy and rich-tasting. Subbed leeks for onion simply because I had it, and didn't have mushrooms, so doubled the carrot. I threw in fennel seeds before pressure cooking, and I could smell them, but couldn't detect them in the finished product (next time I'll add them later). Instead of canned diced tomatoes, I used a small ziplock bag of roasted summer tomatoes. Once pressure cooking was complete, a few squirts of tomato paste and salt were in order, and I decided to give it a bit of zing with 2 t coconut aminos and 3/4 t each garlic powder, onion powder & oregano. This was perfect twirled with spaghetti on a rainy night.
