    I scaled this in half to serve two people. This was quick and easy to pull together. The potatoes were delicious - both my husband and I wished I'd made more. The fish was very good but it didn't absorb any of the lemon flavor from the lemon slices placed on top. Next time I think I'd add some lemon zest before baking. The sprigs of thyme didn't seem to add anything to the flavor - I certainly wouldn't go out of my way to buy fresh thyme for this recipe. We liked this a lot and will certainly have this again.
