    Can substitute pork collar for pork loin.

    This is an easy, excellent adobo marinade for the pork or beef. I cheated and completely sliced the meat and restacked it rather than sharpen my knife sufficiently to do the accordian cut - much more even cuts. I chose pork, grilled chiles and onions, pico de gallo , radishes, and lime to accompany the meat. Everyone overate they liked it so much.
