    A perfect, special occasion breakfast! Used both homemade Banana Bread and Eggnog. I thought the sweetened coconut would be too sweet so used unsweetened flake coconut that I blitzed in food processor. I thought it was great, but my husband, who doesn’t like coconut, didn’t care for it. It would be delicious even without the coconut though! Served topped with fluffy clouds of whipped mascarpone that was barley sweetened and very lightly flavored with vanilla and orange extract. Delicious!
