    Can substitute potato flakes for potato flour.

    This was a very soft, easy to work with dough. I was worried that it wasn't enough water for the bread, but I had to work it with my hands a lot before kneading with a mixer to get it all incorporated. The wrap got all nice and puffy in the pan like a pita bread. It will be a great base for any topping or filling.
