    Loved this Tex-Mex version of cucumber salad with cilantro, mint & cayenne pepper. Cutting the cucumber into thicker slices kept it juicy in the flavorful mix. I didn’t have sour cream so only used plain Greek yogurt. Delicious! Be careful with cayenne, it can get spicy but balanced well with all ingredients.
