Raspberry and almond muffins from Fresh: Simple, Delicious Recipes to Make You Feel Energized! (page 181) by Donal Skehan

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I made quite a few changes as I was wanting a cherry almond muffin! I used dairy so swapped the spread for butter, and used regular milk. I didn't have much caster sugar so I used a light brown sugar instead. I added more ground almonds - using 100g of almonds and 50g less of the gf flour. I added a tsp of almond extract and 1/2tsp of vanilla extract. 250g of cherries (frozen weight, I defrosted a drained the excess juice) Checked at 18 mins and they needed longer so gave them another 3.5mins, so I think they probably needed 22mins at 160fan. Delicious result, like frangipane which is exactly what I wanted. Light and really tasty with a nice cherry and almond flavour and you would never guess they are gf. One to make again!
