    Loved this recipe. Only used half the dressing on the salad. Roasted the aubergine the night before when I had the oven on for something else. So in fact we had this cold, served as a main course for lunch with warm tortilla/pitta breads.

    This is an amazing recipe so full of flavour. I substituted walnuts for pine nuts. Fresh basil and mint with a good balsamic make this a wonderful summer dish.
