    This is a great salad. I cheated and grilled the onions, instead of roasting them in the oven. I made my croutons from my gluten free bagueet in the air fryer; I sprayed them with olive oil and put a dash of garlic powder on them. I added some cherry tomatoes for color, as the salad was a little dull looking. I used shaved Manchego cheese, because that’s what I had on hand. I used 3/4 teaspoon of anchovy paste, instead of whole anchovies, in the dressing.
