Plantains in coconut milk from The Africa News Cookbook: African Cooking for Western Kitchens (page 115) by Tami Hultman

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

The recipe doesn't specify green or ripe plantains. I used ripe, but not overly ripe -- the plantains were still firm. Their sweetness infused with the coconut milk, making a tasty sweet sauce. The recipe recommends serving these with fish, which had me wondering if it's normally prepared with green plantains. Anyway, it's quite delicious as a sweet side or even dessert.
