    Really quite nice for the effort - very fresh and the beet preparation has a lot of other uses. I've done a few variations, using mandarin, navel oranges, and a mix of mandarin and grapefruit as I've not had access to blood orange. All variations were excellent and I enjoy the sweetness of mandarins in this. I've layered cut oranges and beets in a bowl with the marjoram and add fresh dill frond as a garnish - the result looks great and tastes wonderful for a dinner party starter
