Beetroot and goat's cheese quiche from Green Kitchen at Home: Quick and Healthy Vegetarian Food for Every Day (page 165) by David Frenkiel and Luise Vindahl

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute walnut flour for almond flour, spelt flour for rice flour, and spinach for beetroots.

came out lovely, if rather earthy! not my favorite but a fun little project.

Great flavors but poor execution. I don’t know how I was supposed to stop the liquid filling from spreading to the beetroot rim and the amount of cheese was baffling, I fit maybe half. This took much longer to cook than instructed - I took it out at 55 minutes initially and still had to return it for almost 30 because the middle was so watery. This was also difficult to cut. The greens and onion made it stringy and the crust is so soft it crumbles. Despite all this, it tastes great! IF I attempted again, I’d tweak the egg to milk ratio (maybe adding cream instead) to make it less liquid, chop the onions and greens finer, squeeze out excess liquid first and probably use a different crust OR just look for a similar recipe altogether. This recipe lists it’s for 4 while it could clearly serve 6-8 and makes me wonder if they really tested this one.
