    My arugula made this far too bitter. I am thinking to replace part of the arugula with spinach or another green.

    We loved this unique gazpacho, which was flavourful, light and refreshing. Loved the bright green colour! It comes together quickly and is great to serve to those drop-in guests with other appetizers. I had one cucumber and used a bunch of fresh spinach to replace the second one. As well, I used one large garlic clove and the following herbs: dill, mint and parsley. It needed to be seasoned with about two and a half teaspoons of kosher salt. Will definitely make this again.
