    This was a project for my son's Spanish class. We'd never had (or heard of) causa before, but quite liked it - flavor was like potato and chicken salads combined. Used this as a base recipe but also consulted other recipes - no 2 were identical. We used gold potatoes cooked without onion/garlic, mashed with the oil, aji amarillo paste, and juice of 1 lime. Worried about sticking, we lined the springform pan with plastic wrap, but in hindsight that wasn't necessary. We layered sliced avocado sprinkled with lime juice over the bottom potato layer. 2/3 cup mayo was enough for the chicken, and we added a little lime juice to it as well. Garnished with hard-boiled eggs, diced tomatoes, olives, and cilantro. Skipped the salsa golf. It was good a few hours later as well as the next day.
