    A soft and chewy cookie with a nice toffee-like flavor in the cookie base. At first it didn’t seem very special, but later I found I couldn’t resist going back for more. Though it looks humble it really is quite nice. The stated baking time seems too long. In my oven, the baking time was 16 to 18 minutes max (the recipe says 18-22). At 18 minutes you get a cookie that is crisp on the outside with a soft center on day one. By day 2, you lose the crisp edges and the cookie is chewy all the way through. In contrast the 16 minute cookie is softer and less chewy. Also, I added 1/4 salt to the date filling.
