    A nice, impressive cookie. The ginger cookie is very good and crisp. I used a very small 5ml scoop and baked for 12 minutes. Less than 12 minutes yielded a cookie that was crisp at first, then became tough. The filling needs a bit of tweaking. The first batch, made with coconut oil, was a grainy mess. Tried again with butter and that was good, though it lacked a bit of brightness/acidity. I might try a touch of citric acid, next time. The kids thought the cookie was ok (3 stars). My mom friends raved about it.
