    I would strongly recommend cutting the pastry into 6x rectangles from the outset rather than cutting after baking - very messy. The book’s accompanying photo shows the tarts sprinkled with chopped pistachios, which are not listed in the recipe. I would definitely include them, as they helped reduce the sweetness of the tart. I would also reduce the honey in the cream as it completely masked the Earl Grey flavour & made the tarts too sweet for our liking.
