      Granted they are a major ingredient, we found the pecans very much dominated this granola (a case of too much of a good thing). I’d wind back the quantity a bit.

  • Strawberry and Earl Grey cream tart

      I would strongly recommend cutting the pastry into 6x rectangles from the outset rather than cutting after baking - very messy. The book’s accompanying photo shows the tarts sprinkled with chopped pistachios, which are not listed in the recipe. I would definitely include them, as they helped reduce the sweetness of the tart. I would also reduce the honey in the cream as it completely masked the Earl Grey flavour & made the tarts too sweet for our liking.

      Very decadent, very rich. I’m not sure that I could cope with the author’s suggestion of serving this as a brunch dish. I’d be in a sugar-coma all day! Whilst it would possibly alter the character of the dish, next time I might add a handful or so of frozen raspberries to break through the heavy sweetness.
