    I've made this recipe several times now, and it's delicious. HOWEVER, the instructions as given, for the first cook of the pork loin for 12 minutes, resulted in pork that was so overdone it became dry and mealy. I reduced the first cook time to 6 minutes and got a perfect, juicy piece of pork, cooked to the proper temperature and much more flavorful.
